Vine-training : Mechanical work of the soil to avoid the use of weeds. We are on organic wine since 1997 because the respect of the environment.

Harvest : After controlling the maturity, the mechanical harvest allows us to pick up the grapes quickly, at optimum maturity.

Wine-making : Traditional. The grape comes to the cellar where it is stemmed, crushed and goes to the cement tank three weeks long where it is pumped over every day, and released two times. The fermentation is natural (wild yeasts). After a daily wine-testing, the wine-maker decides to rack his wine. The marc (fermented grape) is pressed in a pneumatic press.

Maturing : in cement tank for 10 months.

Serving temperature : 17° to 18°
