Vine-training : Mechanical work of the soil to avoid the use of weeds. We are on organic wine since 1997 because the respect of the environment.

Harvest : At sunrise, to take advantage of the night's freshness in order to avoid oxidation of the grapes juice.

Wine-making : Traditional. The grape comes to the cellar where it is stemmed and crushed, then it goes directly in the press. The juice remains 24 hours in the tank to undergo a natural decantation. The clear juice is put in a tank where it will begin and finish its fermentation with its own natural yeasts.
